Vegetable Pulao

INGREDIENTS

  • 11/2 cup basmati rice
  • ½ cup carrots, boiled and chopped
  • 2 potatoes, boiled and cubed
  • ½ cup green peas, boiled
  • 3 tbsp tomato ketchup
  • 1 onion, sliced
  • 3 tbsp ghee or butter
  • Salt to taste

METHOD

  • Cook rice with little salt in a rice cooker.
  • Melt ghee in a big vessel, fry onions untill golden brown
  • Add vegetables to the remaining ghee, sauté for a minute.
  • Then add cooked rice, tomato ketchup and salt to taste.
  • Mix well and sprinkle and fried onions on the top
  • Serve hot with coconut curry
